My 233rd recipe,"Chaat Chutney (Green & Sweet Chutney)", the essential chutneys to make a delicious Indian chaat. Today's post basically comprises of2 recipes. One to make a Green Chutney and the other to make a Tamarind Date Chutney, a.k.a Sweet Chutney. I had mentioned about my love for Indian Chaat and how easy it is to make one in my last post. Most of the Indian chaat items which are super delicious are always not difficult to make. It is all about having the rightingredients and whenever needed you can quickly assemble your favorite chaat. While there are different components that goes into a chaat, there are 2 ingredients which isused across all kinds of chaat. Those 2 are none other than these Green Chaat Chutney and Sweet Chaat Chutney.

In my opinion, these 2 are the key to bringing out the best flavor for the chaats. For this reason, I do not like buying them readymade from the super market. I love when they are made freshly at home. The process to make them are very simple as well and they can sit in your fridge for a few days. So there is no reason why we should not make them at home. Out of these 2, green chaat chutney is my favorite. It adds a nice freshness and spiciness to the chaats. And also I use the green chutney as a spread while making grilled cheese sandwiches or just as a side for a hot samosa.

And RK loves the sweet chutney. The balance between sweetness and tanginess in this chutney adds the extra zing needed for any chaat. It also helps to cool down your palette while having spicy chaats. With the addition of date it is healthy too 😉 Though the basic ingredients are the same, there are numerous ways to prepare these chaat chutneys. What I have listed below is exactly how I like my chaat chutneys 😉

Ingredients

  • Mint leaves - ¾ Cup
  • Coriander leaves - ¼ Cup
  • Green chilli - 1 Small Chopped
  • Ginger - ½ tsp Chopped
  • Lemon extract - 1 tsp
  • Salt - a large pinch adjust per taste
  • Jeera powder - ¼ tsp
  • Chaat masala powder - ¼ tsp
  • Water - as needed

Instructions

  • Add all the ingredients listed into the mixie/blender along with required amount of water and grind into a fine puree. I used around 2 Tbsp.

  • Store refrigerated and use for chaats.

- Since there is no cooking involved, make sure to wash the coriander and mint leaves nicely.
- Adjust the quantity of water based on the desired consistency.

Ingredients

  • Seedless dates - 15
  • Tamarind - 1 ½ tbsp tightly packed
  • Jaggery - 1 Tbsp
  • Red Chilli powder - ¼ tsp
  • Jeera powder - ½ tsp
  • Chaat Masala powder - ½ tsp
  • Dry Ginger powder - ⅛ tsp
  • Salt - ¼ tsp adjust per taste
  • Water - as needed

Instructions

  • Bring about 1 cup of water to a boil. Soak the tamarind in the water for about 15 minutes. Prepare a thick tamarind extract. The extract measured about 1 Cup. Keep aside.

  • Heat a pan in medium flame with about 1 cup of water and add the dates, jaggery. Stir well until the jaggery is dissolved. Now, add all the spice powders, salt and continue to cook until the water boils. Once the dates is soft, add the tamarind extract to the pan and mix well. Once it again starts to boil, turn the flame to low and let the mixture simmer for a few minutes until the raw flavor of the tamarind is gone. Turn off the flame and bring it to room temperature.

  • Transfer the contents to a mixie/blender and grind it into a smooth paste.

  • Store refrigerated and use for chaats.
